Hummus Flatbread “Pizza”

This sounds like an awesome alternative to pizza for us vegans.

Sometimes I make some weird things. Partially because my toddler son can’t eat dairy or eggs, and partially because I just like to. This may fall under the category of “weird” for some when they hear the name, but it made a nice lunch and was something different than our norm. My son liked it, too! This happens to be vegetarian, vegan, and dairy-free. There are lots of ways to change up the toppings, though! Add some cheese (feta?) if you are a cheese-eater, roasted peppers, mushrooms, or even some chicken. Change it up to suit your mood or what you have on hand! I will definitely be making this again!

Ingredients:
Flatbread, approx. 12in.
Hummus
Cherry tomatoes, quartered (about a handful or so)
2-3 Tbsp. fresh sliced basil
1 Carrot, diced
1 Green Onion, diced
½ small Cucumber, diced
Kalamata Olives, sliced
